Our Organic Fresh Roasted Pataxte Kernels:
Pataxte is one of the oldest cultivated foods of Mesoamerica and a close relative of cacao, long valued by the Maya for its rich flavor and ceremonial importance. Grown on our farm in northern Guatemala, these kernels are carefully roasted, cracked, and shelled by hand to preserve their natural character and depth.
The flavor is warm, earthy, and deeply comforting with notes of toasted grain, dark chocolate, malt, roasted nuts, and subtle coffee. Unlike cacao, pataxte carries a softer bitterness and a rich almost bread-like quality that becomes more pronounced as it melts on the palate.

We are especially proud of this product because it begins on our own farm in Alta Verapaz, where pataxte still grows in the same region it has for generations. The fruit is harvested by hand, then slowly roasted in small batches before being carefully cracked and sorted to remove the shell and preserve only the finest kernels.
Pataxte has traditionally been used in drinks, porridges, and ceremonial foods throughout Guatemala and southern Mexico. Today it remains rare outside the region, known mostly within the communities where it has long been cultivated and prepared.
Enjoy the kernels by the handful, grind them into traditional beverages, blend them with coffee or cacao, or use them anywhere a deep roasted flavor is welcome.
