At Guatemala Trading Company, we celebrate the flavors that define this land, and few carry the warmth and character of Guatemalan cinnamon. Known locally as canela, this is true Ceylon cinnamon, softer, sweeter, and more delicate than the hard cassia bark commonly sold in supermarkets.

In the cloud forests of Alta Verapaz, cinnamon thrives in rich volcanic soil, steady rainfall, and dense mountain humidity. The bark is carefully peeled into thin, fragile quills by hand, then dried slowly to preserve its natural oils and aroma.

Cinnamon is deeply woven into Guatemalan cooking and tradition. It perfumes ponche during Christmas celebrations, flavors atole and tamales, and adds warmth to countless home recipes passed between generations. Among the Qʼeqchiʼ communities of Alta Verapaz, spices like cinnamon remain part of everyday cooking as well as ceremonial foods.

What sets Ceylon cinnamon apart is its balance. The flavor is warm and layered with notes of honey, citrus, and soft wood rather than the sharp heat of cassia. The quills are thin enough to crumble easily by hand, releasing a fragrance that is bright, floral, and deeply comforting.

We never blend or dilute our cinnamon with lower grade bark. Whether steeped in tea, stirred into coffee, simmered into beans, or ground fresh for baking, it adds depth without overpowering the dish.
