At Guatemala Trading Company we celebrate the flavors that define this land, and few spices carry as much warmth and history as our Guatemalan cinnamon. Known locally as canela, this is true Ceylon cinnamon—gentler, sweeter, and more layered than the hard cassia sticks most people know from supermarket shelves.
Ceylon cinnamon first arrived in Guatemala in the 1700s, when the Spanish introduced it to the highlands as part of their search for new spice sources. In Alta Verapaz, the trees found a perfect second home. The region’s cloud forests offer steady rain, rich volcanic soil, and constant humidity, so the cinnamon grows naturally without pesticides or irrigation. Farmers here have passed down the skill of peeling the bark into paper-thin quills for generations, a process that requires patience, precision, and care.
Cinnamon has since become deeply woven into Guatemalan life. Among the Qʼeqchi’ people of Alta Verapaz, it flavors ceremonial dishes like kak’ik, the famous red turkey soup. It is essential in atole, tamales, and traditional sweets, and no Christmas season is complete without ponche de frutas steeped with cinnamon sticks. From colonial kitchens to everyday homes today, it remains a spice of comfort and tradition.
What sets our cinnamon apart is its purity. The quills are thin, brittle, and easy to break, packed with essential oils that give a fragrance both honeyed and bright with subtle citrus and floral notes. We never blend or cut it with lower grades of bark. The result is a spice that adds depth and warmth without overpowering—a quiet but transformative touch whether you’re stirring it into coffee, infusing it in tea, simmering beans, or grinding it fresh for baking.
