Chiltepe is Guatemala’s most beloved wild chili, a small but powerful pepper traditionally grown in backyard gardens and forest edges throughout the country. This bright red, marble-sized chili belongs to the Capsicum annuum var. glabriusculum species, considered the wild ancestor of many modern chilies. It delivers a bold, sharp heat and a punchy, citrusy aroma that makes it a staple in Guatemalan kitchens.

Our Chiltepe is sun-ripened and carefully harvested by Walki’s parents on their family land in northern Guatemala, where the chilies grow under shade trees in rich volcanic soil. Once dried and gently toasted, the chilies are ground fresh in small batches to preserve their complex flavor—smoky, tangy, and spicy.

Commonly used in salsas, curtido (spicy pickled vegetables), and traditional soups like jocon or tapado, Chiltepe adds vibrant heat without overwhelming a dish. It’s perfect for seasoning ceviche, grilled meats, or even mixing into mayonnaise or crema for a spicy kick.
